Harvesting earlier or allowing the olives more time to mature can significantly influence the amount of oil we produce, its aromas, taste, intensity and overall character.

So, what is the actual difference between an Early Harvest Olive Oil and a Regular Harvest Extra Virgin Olive Oil?
It Starts With the Olive
Early in the harvest season, olives are still green and less mature.
At this stage, they contain less oil, which means significantly more olives are needed to produce the same quantity of olive oil.
As the fruit continues to mature, its oil content increases and its character evolves.
This creates one of the fundamental trade-offs of olive oil production:
Harvest early and sacrifice yield for intensity, or wait and allow the fruit to develop further.
Neither decision automatically makes an olive oil better.
They simply create different expressions of the same fruit.
Early Harvest: Green, Intense and Bold
Early harvest olive oil is produced from olives collected at an earlier stage of ripening.
The result is typically a more intense oil, with pronounced green aromas, bitterness and the characteristic peppery sensation that high-quality fresh olive oil can produce at the back of your throat.
Depending on the olive variety, growing conditions and production methods, early harvesting can also be associated with higher concentrations of certain phenolic compounds.
But there is a price for this intensity.
Young olives contain less oil.
That means more fruit, more work and a considerably lower yield for every litre produced.
This is one of the reasons early harvest olive oils are often produced in smaller quantities.
Regular Harvest: Balanced, Aromatic and Versatile
Allowing the olives more time on the tree changes both the fruit and the oil it produces.
The oil yield increases and the flavour profile generally becomes more rounded and balanced.
A well-made regular harvest extra virgin olive oil can still have beautiful fruitiness, bitterness and pepperiness, but often in a more approachable balance.
And that makes it incredibly versatile.
Drizzle it over salads, vegetables, fish, pasta or freshly baked bread, or simply use it every day as the olive oil that never leaves your kitchen.
